Winemaking Notes: Only the healthiest and ripest grapes, which are hand-picked in crates, are left to dry on mats mounted “bunk” in dry, ventilated rooms until the spring following the harvest. Natural dehydration enriches the grape juice, which comes to develop high percentages of alcohol.The dried grapes are then crushed and vinified according to tradition.The must ferments very slowly because of the high sugar content and low cellar temperatures inside small oak barrels called caratelli. The room, named Vinsantaia, is located in an environment that allows for large temperature swings between day and night. The Vinsanto will remain to age for more than ten years in these typical vessels before being extracted and bottled
