Tasting Notes: Carob, burnt sugar, and ripe plum on the nose. The palate is warm and generous. The lower acidity makes the body feel richer, rounder, decadent. Playful tannins and volatile acidity bright depth and balance.
Food Pairing: Mavro has the body and roundness to complement a wide range of flavours; it can lift something fresh like ceviche, add weight to roasted root vegetables or baked cauliflower, or echo the earthiness of fava.
Winemaking Notes: Traditionally, Mavro is rarely used on its own. Not in Commandaria, not with dry wines. In 2020 we set aside a small batch to let Mavro lead. The result is a fuller, more generous Commandaria wine, with a quietly rustic, village-wine character.
